Beets may stain your teeth red, but they are full of nutrients like vitamin C, fiber, and potassium that help your body work its best. Try making this beet hummus at home by following instructions below:

Ingredients

  • 2 medium sized beets
  • 1¾ cups cooked chickpeas (or 1 can chickpeas, drained and rinsed)
  • ½ teaspoon (heaping) salt
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 2 tablespoons fresh rosemary (optional)

Instructions

  • Preheat oven to 375
  • Wrap beets in foil and bake for 30-40 minutes until soft
  • Let beets cool and slip off skins with fingers
  • Quarter and set aside
  • Place beets and chickpeas in a food processor and pulse to combine
  • Add salt, tahini, lemon, and water and process for 2-3 minutes until creamy
  • Pulse in rosemary if desired
  • Transfer to bowl and serve with crackers
