Superfood Pumpkin Oats

Protein works to rebuild muscles while magnesium relaxes them and aids in optimal blood flow. Some experts suggest that magnesium also helps improve sleep quality, and reduce the risk of disease. Fiber helps to regulate digestion and keep you fuller longer. These seeds also contain the amino acid tryptophan which aids in serotonin production in the brain, acting as a mood booster!

Ingredients

  • 1 cup gluten-free oats
  • 1 3/4 cup almond milk
  • 1/4 cup pumpkin puree
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup maple syrup

Directions

  1. In saucepan, combine oats and almond milk over medium heat. Bring to a boil and simmer.
  2. Stir in pumpkin, maple syrup and spices.
  3. Pour into a small pumpkin!
  4. Garnish with superfoods! We like Pumpkin Seed Bars, figs, pomegranate, chia seeds and cinnamon.
