Loaded sweet potato nachos (a game day must)

With a sweet potato base, you can load these up with whatever you want. Barbecue jackfruit, jalapeños, guacamole- go crazy!

Ingredients

  • 2 sweet potatoes
  • 2 Tbsp olive oil
  • 2 tsp garlic powder
  • pinch salt
  • pinch pepper
  • 1 avocado
  • 1 red pepper
  • 2 jalapeños
  • 1 c cherry tomatoes
  • 1/8 c cilantro

Directions

  1. Preheat oven to 425 degrees.
  2. Clean sweet potatoes and slice into 1/4 inch rounds. Coat with olive oil, garlic powder, salt and pepper. Olive oil a cookie sheet and place rounds in single layer. Cook for 20 minutes, flip, and cook 20 more.
  3. While sweet potatoes are cooking, prepare your toppings. We kept ours all veggies but experiment with your favorites!
  4. Remove sweet potatoes from oven and top with veggies. Place back in oven for about 4 minutes to warm veggies.
  5. Transfer onto a serving place and top with avocado or guacamole. Serve with salsa or vegan ranch!
